Susan’s Crab Fettuccine Alfredo (The Secret Family Recipe). When I told Ryan we were having it this week, he was super excited.
Ingredients:

  • 3 T Butter
  • 3 T Olive Oil
  • 1 clove garlic chopped
  • 2 Tomatoes seeded & chopped
  • 1/3-1/2 cup dry white wine
  • 1/3 cup cream (whipping is fine)
  • 1 lb. fresh fettuccine
  • Salt & Pepper
  • 1/2 cup crab meat (1 can)
  • 1/2 parsley chopped
  • 1/4 cup Parmesan cheese
  • 1/2 cup basil

* To seed tomatoes, drop them in boiling water for 1-2 minutes. This loosens up the skin so it easy to remove.
1. Melt butter and olive oil over medium heat. Add tomatoes and garlic and simmer until tomatoes soften and break down.
2. Add cream and 1/3 cup white wine. Simmer 10 minutes. Thinning with more wine if sauce is too heavy.
3. Cook pasta al dente and drain.
4. Add basil, crab, salt and pepper to taste and simmer for 3 minutes.
5. Add pasta and stir well.
6. Sprinkle with parsley and rest of parmesan. Garnish with whole basil leaves.

Gram’s Meatloaf

1 T Dijon mustard

MIX: Meat, crumbs, onion, salt and pepper, 1/2 can of sauce. Form into load, put in pan lined with foil.

Combine rest of tomato sauce, water, vinegar, brown sugar, and mustard. Pour over loaf.

Bake 1 hr 15 minutes @ 350 degrees, basting occasionally.
